Sauce:
Preheat oven to 425 degrees F. Place chicken leg quarters (skin side up) on a baking sheet pan with chopped sweet potatoes and cauliflower. Mix in a bowl the lemon juice, olive oil, and spices. Pour sauce over chicken and vegetables. Place your sliced lemons on top of each chicken leg quarter. Bake for 35-40 minutes to 165 degrees F inside the chicken. Enjoy!
